Classic Loaded Cheesy Nachos

Method

Preheat the oven to 190 degrees C, or 170 degrees C fan.

Season the beans in a small bowl with ground cumin, smoked paprika, and a pinch of salt.

Spread half the tortilla chips on a large tray. Add half the beans, onion, jalapenos, and tomatoes. Sprinkle over half the cheese. Repeat with a second layer of chips and remaining toppings, finishing with cheese on top.

Bake for 10 minutes, until the cheese is fully melted and bubbling but not overcooked.

Finish immediately with sour cream, fresh coriander, and lime juice.

Notes

Keep everything in a relatively even layer to avoid soggy chips. Best eaten straight from the tray while hot and crisp.
